The golden colour indicates that the optimum frying point has been reached, thus obtaining a potato chip with the best quality and safety attributes. However, not all food handlers share a similar criterion to identify the golden colour; therefore it is subjective to each user. SafeFrying App will help you to identify the golden colour.
SafeFrying App offers a brief tutorial to learn how to use it. It consists of three stages: takes a photo of a fried potato, limits the area of the image to carry out the evaluation, and shows the result. The App extracts the dominant colour of the selected section, which is rated within a table of acceptance/rejection criteria previously built with laboratory data. The outcome of this evaluation indicates the proximity of the colour of your fries to the target golden colour. If the golden colour is not achieved, the App provides a series of tips that will appear randomly to improve your next experience in frying potatoes. SafeFrying App is primarily designed for fried potatoes in strips or sticks, the so-called French fries. It may also be used for segments and dices, although the result of the evaluation is less accurate. However, the App does not generate suitable results for potatoes cut into slices.
SafeFrying App also offers links to a number of pamphlets, documents, websites, and videos, that advice how to reduce the formation of certain undesirable compounds that are generated during frying of the potato.
